I was generously given some preserved meat and cheese from a friend. The cheese was great, but I kept wondering what to do with the meat. It was actually a pre-cooked sausage, and at 200 calories per 2oz serving I knew it was going to be a healthy one. You know what it is, from those meat and cheese gift baskets, it’s about a foot long, and 2 inches thick. Reminds me of salami. Something like
It’s rather scarey and in the past I’ve thrown it out, just out of pure fear. I refused to throw it away now. So I did a few things with it which turned out quite yummy.
First, I sliced it up, diced and sauteed some onions, and threw the meat in with the onions for about 5 minutes. Then put it on bread, added brown mustard and had an amazingly delicious sandwich.
I sampled some to my 5 year old daughter and she liked it, so I sliced and chopped up the meat into a nice small portion for her, sauteed it in its own juices and then smothered it in cheese. She loved it.
Next morning I made a hash of sorts out of it. Chopped it into small pieces and sauteed it with olive oil and diced onions. Added basil and parsley and we had some yummy “hash”.
Now I still have about 3/4 of the thing left. What to do next…
